This recipe is from Leachelle!
Stock is made from water I steam my vegetables over, so it has all the goodness from the veggies but no salt. I use about 750ml to a litre.
I cut up a large chicken breast about 250 - 300 grams into thin strips.
Then I grate:
2 carrots
1/4 pumpkin
1/4 sweet potato
1 zuccini
2 celery sticks
2 medium potatos
Very small amount of onion.
I put it all into a pot on the stove, bring it to the boil stirring then turn the heat down & let it simmer for 45 min - 1hr whenever the chicken is cooked through. Then I zap it with a stick blender for a minute untill its all smooth. I then feeze it ( once cool ) in small sandwich bags.
Its usually a nice thick soup - if its abit runny I put small bits of wholemeal bread into it when re-heating & that sopps it up.
My lo loves it, its very healthy & very easy.
